For this Cane Island Single Estate Panama Rum, we wanted to pick a rum that shows the versatility and craftsmanship of Varela Hermanos. We found a six year old rum that had the perfect harmony between aromas from raw material, flavor compounds created during fermentation, and character built during maturation in the tropical climate of Panama. High-grade molasses with a high sugar content is diluted with water from a dozen wells surrounding the Hacienda, and fermented for 48 hours using the distilleries own ā€œpineappleā€ yeast. The resulting wash is around 8% abv and full of organic flavor compounds. After distil-lation using only one column, the rum comes off the still at around 78% abv, gets diluted to 68% abv and filled into ex-bourbon barrels for a minimum of 6 years of tropical aging. This rum has a deep golden color with aromas of Toffee, Caramel, Cinnamon, and Vanilla. The texture is velvety and creamy with expressive flavors of Butterscotch, Coconut, Molasses, Tobacco, and Oak. The finish is complex, long, and deeply bittersweet. An excellent sipper!
