The process begins by extracting molasses during sugar production. The molasses is diluted with local spring water, to which yeast is added to induce fermentation, typically lasting between 12 and 16 hours to produce the desired flavor profile. The fermented wash, which has an alcohol content of around 8% ABV, is then distilled, using continuous column distillation. Hot days and cool nights allow the rum to mature at the right pace, maximizing the interaction with the wood, but evaporation can be as high as 10-14% of Angel’s share per year. Our Cane Island Venezuela Rum is matured in Ex-Bourbon barrels for a minimum of 8 years at the distillery before bottling. he result is nothing short of sensational. A smooth and well-balanced rum with a cop-per-brown color, and a smooth, gentle texture. The nose is full of Caramelized Orange, Vanilla, White Chocolate, and Oak aromas, while the palate offers more Dark caramel, Shortbread, and Spice with a wisp of smoke on the finish.
